"Spiced Fish

SPICED FISH—I

Cook together for ten minutes one cupful of vinegar, one tablespoonful of sugar, and six each of whole allspice, cloves, and peppercorns. Strain over two cupfuls of cold cooked flaked fish, and serve very cold.SPICED FISH—II

Cool five pounds of sliced fish in salted water, drain, cool, and skin. Boil together a quart of vinegar, two blades of mace, a small onion sliced, a small red pepper, two tablespoonfuls of grated horse-radish, six cloves, a bay-leaf, a tablespoonful of mustard seed, and half a cupful of water. Put the fish into an earthen jar, pour over the hot spiced vinegar and let stand in a cold place for two days before using.

Ingredients: 1 package (12 ounces) Gorton's Crunchy Golden Fish Filletsor Crispy Battered Fish Fillets1 medium onion, chopped (about 1/2 cup)1 clove garlic, finely chopped2 Tbsp vegetable oil1 can (16 ounces) whole tomatoes2 Tbsp parsley flakes1 tsp dried oregano leaves1 tsp salt1/8 tsp pepperDash of ground red pepper

Directions: Heat oven to 425ºF.Place Fillets in ungreased rectangular baking dish, 11 x 7 x 1 1/2 inches.Bake uncovered 20 minutes.Cook and stir onion and garlic in oil in 2-quart saucepan until tender.Stir in remaining ingredients.Heat to boiling, stirring constantly.Reduce heat: simmer uncovered, stirring occasionally 15 minutes.Pour over Fillets. Bake until hot, 10 to 15 minutes.
