FISH LOAF

Ingredients

  • 1-½ pounds any raw, white fleshed fish, chopped fine or
  • 1 pound canned salmon or tuna fish or
  • 2-½ pounds flaked, boiled fish, any kind.
  • ¼ cup soft bread crumbs
  • 1 tablespoon Argo or Kingsfords Cornstarch
  • 2 tablespoons corn oil
  • 2/3 cup milk
  • 1 egg
  • 1 tablespoon onion, minced
  • 2 cups mashed potatoes
  • 1 teaspoon minced parsley (optional)
  • ¼ teaspoon salt
  • ¼ teaspoon paprika
  • INSTRUCTIONS

    Line a buttered baking-dish with mashed potato that has been well seasoned with pepper and salt, and made light with well-beaten eggs.

    Fill the center with Creamed Fish, canned fish, or boiled fish, seasoned to taste, cover with more mashed potato, rub with butter, and bake until the top is nicely browned.

    Serve in the same dish.

    Just like Meat Loaf, only it's made with fish...
