"Baked Fish Is Delicious And Easy To Prepare..."

BAKED FISH

Measure the fish at its thickest point. Bake for 10 minutes per inch for fresh fish and 20 minutes for frozen fish. This is known as the Canadian method.

Prepare a Cream Sauce, seasoning with grated onion, minced parsley, and powdered mace.

Take from the fire, add the yolks of two eggs, and salt and pepper to taste.

Put a layer of cold cooked flaked and seasoned fish into a buttered baking-dish, spread with the sauce, and repeat until the dish is full, having sauce on top.

Sprinkle with crumbs, dot with butter, and brown in the oven.

This may be baked in individual dishes if desired. Not all at once, of course. Many people, especially on Cape Cod, have trouble with woodpeckers drilling holes in the sides of their homes. There are are number of ways to prevent and control these errant woodpeckers, so if you have a woodpeckers problem, help is available.
